Chicken Maryland & Roasted Red Grapes

Preheat oven to 180°C (fan-forced).

Arrange chicken marylands on a large lined baking tray. Scatter grapes and mini capsicums around the chicken.

Drizzle everything generously with olive oil.

Season chicken well with your chosen spice rub and a pinch of salt.

Roast for 40 minutes, or until the chicken is cooked through and golden, and the grapes have blistered and caramelised.

Finish with a squeeze of fresh lime and an extra sprinkle of salt flakes before serving.
